daddy buffaloEureka Land and Cattle Company (ELCC) takes pride in the buffalo and the products they produce. The animals that live on their ranch are well taken care of and looked after. Jim and Christine did not want to settle at all when it came to the quality of their meat. They only harvest animals that are prime age of between 18 months to 2.5 years old when the meat they produce is the best quality, the healthiest, and lean. To ensure that their standard is continued, they then transport the buffalo 140 miles to White's Meats. White's Meats has the highest of standards and the quality of their work is second to none. White's Meats is a USDA certified facility and here the animals are harvested and packaged.

Their Buffalo is grass fed and 100% natural. There are many advantages to feeding the animals grass as opposed to grain and those advantages are passed down to you. We do not add any beef fat to our product (like your local grocery may). If you are buying buffalo meat from any other source, it is important that you read the label. Most places add beef fat to the ground buffalo. This adds fat, decreases the health benefits and could potentially contaminate the meat with antibiotics and hormones. We can guarantee that the meat you purchase from us is 100% grass fed, all natural buffalo, nothing more and nothing less.

Research by Dr. M. Marchello at North Dakota State University has shown that the meat from Bison is a highly nutrient dense food because of the proportion of protein, fat, mineral, and fatty acids to its caloric value. Comparisons to other meat sources have also shown that Bison has a greater concentration of iron as well as some of the essential fatty acids necessary for human well being.

Readers' Digest magazine has even listed bison as one of the five foods women should eat because of the high iron content.
